Usually, I start we a 30 minutes discovery meeting (using Microsoft Teams, as first option) when we initialize the gathering of the IT environment that the customer has, to identify current services status, identify potential issues, and points of improvement. After this meeting, I create the action plan to start working on your specific requests.
I know this kind of services are not commonly standardized, and that every customer has some particular needs, that need a major effort, you can add more days of work. My goal is to help you to get focused on your business, and let all the IT staff being backed but my experience )
